If you’re an adventurous foodie like the team at Dish Cult, then there’s no doubt you love a bit of fusion from time to time. Often combining the best flavours and techniques from multiple cuisines, resulting in mind-blowing dishes that you’ve never tasted before. Here in Dublin, we’re so lucky to have a number of fusion spots to explore, and we’ve rounded up the best pick of the bunch!
Red Torch Ginger Sandyford offers a delightful journey through the rich and diverse flavours of Southeast Asia. This fusion restaurant artfully combines Thai, Vietnamese, and Malaysian influences, creating dishes that are as visually stunning as they are delicious! From Pad Thai to fragrant Pho, the menu is a tapestry of vibrant flavours and aromas that will transport your senses. Don’t sleep on the ‘Drunken Prawns’ (tiger prawns doused in Shao Xing Wine and topped with shredded ginger), they’re to die for!
ANANDA is an Indian/Irish fusion restaurant that prides itself on their ‘thought-provoking dishes’. Here, the chefs seamlessly blend traditional Indian flavours with modern techniques and Irish ingredients, resulting in innovative plates of food that will leave you craving for more. From roasted goat (ghee poeled Irish Boer goat leg; wild moss masala rub) to seared Kilkeel scallops served with jerusalem artichoke korma & chips — the dishes are truly spectacular. Arrive hungry: portions are generous, and you’re more than likely to want to try a dessert too…
With a focus on fresh, locally sourced ingredients, this fusion restaurant offers a European twist on classic Chinese dishes. The menu is a perfect marriage of tradition and innovation, making it a must-visit spot for those looking to experience something a bit different. Menu highlights include their cheeseburger spring roll with Sichuan ketchup, the taro duck croquettes with apple, and their pickled tempura artichoke with tom yum mayo. We love the vibes here too: full of music, chatter and cracking decor, fusion restaurants don’t get much better than this.
Saba South William Street presents a moreish fusion of Thai and Vietnamese cooking that we guarantee will tantalise the taste buds! The menu showcases an array of well thought out dishes that seamlessly blend the aromatic herbs and spices of Southeast Asia. There’s plenty for veggies and vegans (not least their spicy tofu popcorn dish!) and meat-eaters too. Whether you’re looking for something hearty and filling (like their noodle dishes), or something light and refreshing (like their Thai beef salad) — there’s something to suit almost everybody.

Bad Bobs Temple Bar is a well-loved gem, known for marrying the hearty flavours of American and Irish cuisines. Don’t expect anything too fussy — the food here is simple but tasty. Stand out dishes include their ‘Guinness Tacos’ , made with Guinness braised beef, spiced avocado and pickled red cabbage, their smash burgers made with top-of-the-range Irish beef, and the chicken wings smothered in their secret homemade hot sauce. The staff are welcoming and the atmosphere is very laid-back, making it an ideal spot to catch up with friends and family.
