Coinciding with its second birthday this year, The Silver Birch announced Nathan Cornwell as Head Chef earlier this year. The local neighbourhood restaurant on Chiswick High Street has got itself a major coup in Cornwell, who previously served as Head Chef alongside chef patron Mark Birchall at the award-winning The Barn at Moor Hall.

The Silver Birch has become a local favourite since opening its doors two years ago, and continues to offer the same warm and welcoming atmosphere that’s overseen by General Manager Thomas Proden.
With impressive culinary talent and a love of foraged ingredients, as well as highlighting different cooking techniques through the use of pickling and preserving, Cornwell and his team bring a refined and elegant cooking style to The Silver Birch.

Sticking to the restaurant’s ethos of using locally sourced, hyper-seasonal ingredients, Cornwell has devised a sublime new menu that showcases the regional ingredients found on the restaurant’s doorstep or from a network of local suppliers.
Highlights from the new menu include starters such as the popular Ex dairy beef tartare, with mustard, kohlrabi, nasturtium and herb cracker.
Mains come in the form of Yorkshire grouse with smoked bacon, celeriac and foraged elderberries or Newlyn monkfish, Fowey mussels, sea herbs and seaweed butter, while the likes of Brown butter chocolate delice, milk sorbet and caramelised white chocolate help complete the menu.

We’re particularly impressed with the set lunch menu, too. Served from 12pm Wednesday to Saturday, you can get two courses for £38 or three for £42.
We love the refreshing Cured Cornish Seabream with oyster, dill and cucumber starter, while the Shetland cod, charred lettuce, smoked broccoli and mussel cream is an superb main where you can see Cornwell really flex his gastronomic skill.
The Valrhona chocolate mousse with milk sorbet and Scottish raspberries is an excellent way to round off such a marvellous lunch.

During his four-year tenure at Lancashire’s The Barn at Moor Hall, Cornwell helped the restaurant achieve several accolades and awards, cementing its position as one of the UK’s top restaurants. In 2022, The Barn at Moor Hall was awarded a coveted Michelin star.
Prior to his stint at The Barn at Moor Hall, Cornwell worked in top-flight kitchens, including roles at Kitchen W8, Copenhagen’s Geranium (3 Michelin Stars), Stockholm’s Kadeau and Oaxen Krog (2 Michelin Stars respectively), and 2 Michelin-starred Le Champignon Sauvage in Cheltenham. Cornwell was successful in reaching the final six at the 2021 Roux Scholarship, following a series of regional heats and beating off competition from across the country.
Suffice to say, The Silver Birch is now in very safe hands and we wouldn’t be surprised if Michelin would be awarding them some time soon…
