There’s street art on the walls, a cool LA food truck vibe and attitude to burn at Sydney’s Vandal Taqueria. There’s also no meat in the kitchen at this 100% plant-based, Mexican-inspired joint, but we promise you won’t miss a thing. Don’t believe us? Then try the Korean fried eggplant taco. You’ve got crispy karage-style fried eggplant on an organic corn tortilla, shaved queso, carrot and coriander slaw, cashew créma and a sticky barbecue sauce that brings it all together. It’s Korean, it’s Japanese, it’s Mexican, it’s LA and it’s very Newtown, not to mention crazy delicious. Hardcore carnivores will be converted… just saying…
