Dish Cult's 2023 Michelin Guide winners in Bristol

The full list for the Michelin Guide 2023 has been confirmed at a prestigious ceremony celebrating UK and Ireland restaurants. Michelin awarded 21 new restaurants one star, while three were awarded two stars in its guide this year. No new three-star restaurants were announced, but the owners of the lauded red book confirmed no-one had lost their three or two-star ratings either. Here we’ll be looking at Bristol’s winners, all of whom you can book your table with through Dish Cult!

Bulrush retained its one star. The innovative neighbourhood restaurant in Cotham was praised for it modern British cuisine.

“It might appear quite modest, but this neighbourhood restaurant is a sweet spot, with an appealingly relaxed, cosy feel; sit downstairs to soak up the atmosphere from the on-view kitchen. Top-notch seasonal ingredients are either foraged or organic, and preserving and pickling play a key role on the imaginative, well-balanced and deftly prepared tasting menu,” the Michelin Guide says.

The small and independently owned Wilsons in Redlands retained its Green Star. The Michelin experts said: “Wilsons is one of those appealing neighbourhood places that works in pure harmony, with everyone from the chefs to the service team sharing the same ethos. Sustainability leads the way, with generously proportioned, highly seasonal cooking showcasing ingredients from their smallholding.”

Bristol came out on top in the new announcements for Bib Gourmands, a distinction highlighting establishments offering great quality, great value cooking.

The Blaise Inn pub was one of those awarded a Bib Gourmand. The pub in Henbury was taken over by new owners in 2021, which has brought the kitchen into the 21st century. The guide praised the village inn’s “good value, traditional British dishes cooked with a skilful, modern approach” to cooking.

Root is a small independent restaurant, with a terrace overlooking Bristol’s harbouside, that’s also been recognised by the Michelin Guide with a Bib Gourmand. This small plates restaurant focuses mostly on vegetables, championing seasonality and using local suppliers where possible. The team has recently opened a site under the same name in Wells, which has been newly awarded a Bib Gourmand.
