If you’ve watched The Great British Menu over the last few years, you’ll have heard of Pike and Pine’s chef/owner Matt Gillan. He’s appeared in series’ 8 and 10, and was even the winner of the main course in season 10. Offering modern British dining in the evening, Pike and Pine focuses on tasting menus of six, eight, or ten courses. Choose from treats like beetroot tartare with egg yolk jam, and lime ice, or nibbles like the bon bons with miso mayo. They’ve recently been shortlisted for best designed restaurant in the world, so you know you’re in for a visual and taste treat when you visit.

If you like your food pictures to look as good as your actual dishes taste, The Set might just be the place for you. Another tasting menu restaurant, The Set features three menus, simply named One, Two, and Three, each featuring four courses with prices starting at just £43. Most dishes on the menus aren’t given names, instead are listed by their ingredients like “rabbit, fennel, rhubarb”, or “carrot, mustard, yolk”. This means you know roughly what you’re getting, but also that each dish is a surprise in itself. And pretty. It’s all very pretty, because these chefs clearly know that we eat with our eyes and ensure everything is artfully arranged on the plate. If fine dining in Brighton is what you’re looking for, The Set definitely needs to be on your list.

Another restaurant by a GBM winning chef (they really love a spell on TV, these guys) Michael Bremner’s 64 Degrees is a small plates restaurant situated in the Brighton Lanes. They were voted the best restaurant in Brighton in both 2016 and 2017, so you know your Brighton fine dining experience is in good hands. Their menu changes regularly but you can expect outside-the-box dishes like radicchio tacos and sunflower ajo blanco, all served with Michael’s individual flair. Their desserts are famed in Brighton, with their chocolate ganache being a thing of dreams, and if you’re feeling full after all their delicious small plates, they have a selection of dessert cocktails to cure a sweet tooth.

We really like small plates. Like we really like them. Which is obvious considering the choices on this list. But while Pascere does serve dainty little dishes of joy, they also do a full à la carte menu too. This cool restaurant near Brighton Lanes has something to suit everyone, with a fairly large veggie selection and the option to contact them with special dietary requirements. (They’re very accomodating.) Favourites from the à la carte include treats like red millet with sauce bouillabaisse, clams, fennel, and saffron potatoes; and confit violet artichoke with polenta and pepperonato with smoked baby ganoush. They’re not afraid to push the boat out with flavours, making it a great place if you want to try something new, while their relaxed dining room makes this the perfect place for fine dining in Brighton.

If anyone knows a thing or two about dining right, it’s the Italians. Which is why we’ve brought you to Edendum, an Italian restaurant that focuses on great produce and an even better dining experience. There’s plenty of reasons why The Sunday Times named them one of the top three Italian restaurants in the country, not least that everything possible is cooked freshly on the premises. They source the ingredients for dishes like their famous arancini, egg tagliatelle with crevettes and lemon balm, and risotto with mushrooms, and liquorice powder, from both Italy and Sussex and are proud of the freshness of the menu.
