Based in Manly on the Northern Beaches, InSitu is revered far and wide for this moreish spin on the classic espresso martini.

Pull up a chair the bar any Thursday Friday or Saturday night and you’ll witness the phenomenon in action: tens of them at a time, lined up and poured out. Sure they have an arm length long list of other cocktails, but this cinnamony goodness is what it’s all about.

Our take on recreating it: mix 2 teaspoons of coffee into 40ml of boiling water (steep it for longer for extra strength and flavour).

Next, pour the coffee into a cocktail shaker, wait for it to cool and add 1 shot of coffee liqueur, 1 shot of vodka, 1 shot of apple liqueur, a micro drop of vanilla essence, sprinkle of cinnamon – and shake!!

Once you’ve strained the cocktail into an easy martini cocktail glass dust it with a cinnamon sugar mix, lightly coat the rim with apple liqueur and dust with cinnamon sugar, similar to a salted martini glass.

Add the obligatory three coffee beans for crunch and instagrammable aesthetic, drink responsibly – and prepare to DANCE.
