Kanada-Ya's exclusive ramen only found in London

Founded by former cycle racer Kanada Kazuhiro in Kyushu in 2009, Kanada-Ya has won a number of awards in its home country and has introduced its meticulously crafted ramen to a London audience with its first opening on St. Giles Street in 2014. Since then, the highly popular brand has opened three additional sites (Piccadilly, Angel and Carnaby) with the latest in Ealing opening in July 2022. In homage to its adopted home outside of Japan, on the menu in London you can find an exclusive ramen dish that you won’t find anywhere else…

Kanada-Ya has perfected its unique cooking technique to create the perfect ramen. Whilst extremely time-consuming, this process results in a rich clarity of taste and a delicious, creamy appearance that sets Kanada-Ya’s ramen apart from its competitors.

Kanada-Ya’s signature ramen consists of noodles, tonkotsu broth, secret sauce (imported from the original restaurant, and hand-made by Mr. Kanada himself), kikurage mushroom, finely sliced spring onion, chashu pork belly and a sheet of nori.

Variations of the restaurant’s infamous ramen include a Moyashi ramen, which introduces blanched beansprouts into the mix, and Chashu Men ramen, which replaces the standard chashu pork belly with large slices of the meatier chashu pork collar.

One of the more recent introductions has been Gekikara, served with spicy ‘tan tan’ style minced pork and pork belly chashuu, as well as Chicken Paitan and the Seafood Ramen.

Exclusive to London though is the delicious Tonkotsu X – a variation of the classic Tonkotsu. This nourishing bowl comprises pork and corn-fed chicken bone broth, chashu pork belly, spring onion, wood ear fungus, and yuzu-shoyu. Make sure to add a Hanjuku Egg because this is more than just a standard nitamago, this is a St. Ewe ‘rich yolk’ egg soft-boiled and cured in a homemade sweet chashu sauce overnight. A ramen bowl wouldn’t be ramen without an egg, and this Hanjuku Egg helps elevate the already incredible flavours.

Order some pork, ginger and garlic gyoza for the table and you’ll have a little feast you won’t want to end.
