We can all agree, we've probably eaten a staggering amount of cheese during lockdown – so, why not add another cheese-based recipe to the list at this point? Auckland Viaduct's Coops Corner Pub has kindly shared with us one of our favourite entrees from the modern gastropub – their Kinda Fondu.
This triple cheese dip is even easier than you’re imagining (with plenty of room for optional add-ons to navigate the flavour to your liking) making for an easy crowd-pleaser to keep the troops settled until the main dish is served. Usually served with Coops’ Pizza Sticks, feel free to get creative as we wait out our next visit to Coops when they reopen.
125g cream cheese (room temperature)125g sour cream (room temperature)150g grated cheddar 10ml brandy (optional)One red chilli finely choppedSmall bunch of coriander finely choppedGround black pepperFlaky sea salt Pre-heat oven to 180°Place the room temperature cream cheese and sour cream in a sauce pan or medium size pot and stir over a low heat until soft (don’t boil).Add the coriander, chilli, brandy and half the grated cheese, season with salt and pepper. Stir until combined and smooth.Pour into a small ovenproof dish and put remaining grated cheese on top. Place in the oven until cheese melts and becomes golden.Serve straight away in the cooking dish with corn chips, breads, or your favourite raw veges. Things looking a bit different here?
