The head chef is Ricardo Ramirez, who was born in Mexico but more recently cooked in New York and France.
His menu includes ceviche with coconut cream and blue tostada and grilled octopus with potato terrine, chilli mayonnaise and fresh dill. Dessert might be goat cheese ice cream with green grape puree and vermicelli nest.
