The emphasis is on the wild and preserving the seasons. The majority of the produce is from our gardens, farm and hills. A quality wine list also available. The 8-course tasting menu (£95pp) is cooked over open-fire and served in a secret location surrounded by scenic Highland beauty. Fairytale stuff. Head chef, Tim Kensett, spent nearly 5 years at the iconic River Cafe, followed by roles as Head Chef at Storico (New York), Goldeneye (Jamaica) and The Fife Arms (Braemar). “The food is inherently simple with a focus on not trying to over-complicate flavours. With access to wild vegetables and herbs and flowers at their peak my job, as cook, really is to highlight and enhance their natural qualities.
