Latin American-inspired dishes, are prepared up close and personal over the live-fire grill.  Guests will be delighted as they experience a wide variety of flavors and fresh ingredients reminiscent of Mexico and Peru. <br/>Carbón serves selected prime and aged cuts using the live-fire grill, along with pierna de bestia - barbacoa slow cooking style to give a wider variety to all our guests. Rounding out each meal are Latin-influenced desserts including Tarta de Piña (woodfired pineapple tart) and Chuddos (churros x donuts). In the middle of the entrance, Carbón’s guests will be welcomed by an infused tequila counter – truly one of a kind, if not the only one in town.<br/><br/>The interior design invites the guests to imagine a post-apocalyptic, steampunk mash vibe which they call “Post Apocalyptic Adventure Shack”. This concept generally conveys the idea of invoking a sense of adventure when guests enter the space with its chargrilled wall panels, the Amazon river formed by floating charcoals, the cracked walls, the fossilized wood texture, the lava oriented wall panels, steampunk-themed sculptures, and last but not least: the Grill. All these components are mashed up in a single room so that guests can feel the excitement once they enter the area while being tantalized by the smell of burnt wood, fire action, and the visuals of the space.<br/>
