Palmito is a tiny informal 20-seater restaurant located in a former takeaway close to the Brighton-Hove border on Western Road. It was born out of the idea to create a real market-style place in Brighton. Diego comes from Ecuador and has lived and extensively travelled the Americas, Europe and South Asia and this is represented in his everchanging eclectic, spice-driven menu. Our open kitchen with a charcoal grill is at the heart of our restaurant. We work closely with small local farmers & wine merchants who share our values and our menu and wine list change regularly For us simplicity, seasonality, community and spontaneity are key and we look forward to welcoming you to Palmito.
