Singapore noodles are a popular dish in many Chinese restaurants around the world, despite not being a traditional dish in Singapore itself. Typically consisting of thin rice noodles stir-fried with a range of ingredients, usually including shrimp, pork, chicken, scrambled eggs, onions, bell peppers, bean sprouts, and curry powder or curry sauce. The distinctive taste comes from a blend of soy sauce and curry powder, with a few extra seasonings. With restaurants in Kensington, Chiswick, Putney, Ealing, and Bloomsbury, Hare and Tortoise is serving up predominantly Japanese fare, but dig deep into their menu and you’ll find their take on Singapore Rice Noodles.
The dish comes with wok-fried thin rice noodles with shredded chicken, prawns, egg, carrots, onions, beansprouts, topped with chilli and served with lime. The rest of the menu allows for a real Asian fusion experience with sushi and sashimi, donburi, ramen, and pad thai. While they don’t have Singaporean noodles on the menu, they do have Singaporean-style noodles in the form of chow mein. Cooked with white onion, beansprouts and spring onion, they take egg noodles and stir-fry them in a rich and velvety chow mein sauce. Similar to Singaporean sauce, chow mein sauce is made with of soy sauce, oyster sauce, sesame oil, sugar and cornstarch for thickening, meaning this may just keep the Singaporean cravings at bay!
Nestled into the busy city centre, Chi Noodle Bar is renowned for their Singapore noodles, cooked up in the unsuspecting hole-in-the-wall wine bar. The menu is full of Pan-Asian dishes, ranging from Korean chilli beef skewers and salt and pepper squid to grilled chicken ramen and crispy duck rolls.
You’ll find their signature Singapore noodles under the stir-fry section of the menu. Here, they’re made with stir fried rice vermicelli in a medium spice curry paste with prawns, egg, chicken, carrots, mange tout, garnished with sesame seeds and a wedge of lime. They even have a vegan option so everyone can enjoy!
The award-winning Singapore Gardens in South Hampstead is all about dishing up Singapore and Malaysia’s best dishes. Singapore Garden often has repeat diners from Singapore and Malaysia claiming this is the spot for Singaporean-style noodles.
You’ll find them on the menu under the name ‘Singapore Fried Mee Hoon’. Here, they serve the dish up with rice vermicelli noodles, pork, prawns, fishcakes, eggs, beansprouts, and a mild chilli sauce.
