All the bounty of the state in Melbourne’s most central location?

That’s what you can expect at Victoria, the much anticipated new restaurant from the team behind Gippsland paddock-to-plate fine diner Farmer’s Daughters.

The 250-seat restaurant and bar, which will feature an open kitchen and a formal dining space as well as an outdoor terrace at Fed Square overlooking the Yarra, is already taking bookings ahead of its July 28 opening.

The man at the helm, acclaimed chef Alejandro Saravia, who at Farmer’s Daughters champions the produce and wine of the Gippsland region, is excited to expand his remit to showcase high quality ingredients from all of Victoria’s food producing regions.

“As a proud Victorian, I feel very privileged to showcase the people, places and producers that make up this incredible state and through this venture, we hope to create an inspirational gateway to regional discovery that demonstrates why Victoria is the culinary and arts capital of Australia,” he said.

Together with Head Chef David Boyle, Saravia is planning a menu which will make the most of the kitchen’s ability to cook over wood and charcoal, and highlight ingredients as diverse as whole rock lobster from Apollo Bay, sea urchin from coastal Mallacoota, and pasture raised Summerfield lamb from the Pyrenees.

To further spotlight Victoria’s exceptional produce, the restaurant will feature a sensory table made from reclaimed eucalyptus obliqua timber where diners can get up close and personal with the ingredients that will make up their meal.

Wine is certainly not an afterthought either, with the restaurant to feature a 20-seat wine library with over 3,000 bottles, some of them museum wines from wineries such as Bass Phillip and Eastern Peak. Head Sommelier Matt Jensen will focus exclusively on Victorian wines, beers and spirits in a bid to again further highlight the excellent quality the southern state is able to bottle.

After the many lockdowns of the last few years, Victoria by Farmer’s Daughters is a bold attempt to bring the regions to the city and celebrate everything that is great about this state. And we’ll certainly drink to that!
