Galvin at Windows launches new vegan tasting menu

Sky-high restaurant Galvin at Windows has collaborated with one of Borough Market’s oldest greengrocers to bring a showstopping six-course tasting menu, featuring the finest of this season’s offering.

Galvin at Windows and Borough Market’s greengrocer and restaurant Turnips have come together to create a showstopping, fine-dining vegan tasting menu that demonstrates just how superb plant-based dishes can be.

Galvin at Windows Head Chef Marc Hardiman (ex- The Ritz Hotel) and Turnips Chef Patron Tomas Lidakevicius (ex-Jason Atherton’s City Social) have plated up a carefully considered six-course menu that features spring’s finest ingredients exclusively sourced from the Turnips stall and local producers.

Served at the London Hilton on Park Lane’s sky high restaurant while following Turnips’ ingredient-led ethos, the two chefs have created three dishes each, each centred around a seasonal vegetable with sustainable eating in mind.

Among the highlights are a refined twist on British classics, with dishes such as Wye Valley asparagus, morel mushrooms and nettles; celeriac ribbons, mint and capers; and coconut crème, macerated berries and lemon verbena for dessert.

To go with the dishes, Head Sommelier Rudina Arapi has selected a range of delicate vegan and organic wine pairings from renowned wine-growing regions, including a vibrant Vouvray from Touraine, and a natural red Morgon from Beaujolais.

The menu is available until 29th May, during lunch and dinner service Wednesday to Saturday. The six-course-tasting menu is £99 per person including wine pairing or at £65 per person without wine pairing.
