Intrigued? We’re talking about the madeleine, a cake made famous by French writer Marcel Proust. We can’t say we’re that into French literature, but we can say we’re definitely into the Madeleines made by Melbourne institution Cumulus Inc.

Not quite. It’s “Madeleines, bergamot curd” on the menu.

Why is it a winner?

All hail the Madeleines at Cumulus Inc! These sweet little shell-shaped cakes have a big reputation, and if you’ve tried them here, you’ll know why. Cooked when you order them, they come to your table warm, with a slightly crusty exterior and a meltingly soft, spongy crumb. Dusted with icing sugar and served with citrus-y bergamot curd, they are the perfect way to end what was no doubt another fabulous meal at Andrew McConnell’s always excellent eating house and bar.

Brunch has just restarted for winter weekends at Cumulus Inc, so if you’ve never been, or not been for a very long time, now’s the time to go back. We’re thinking of the twice baked goats cheese soufflé with Lion’s mane mushrooms and Oak Hill truffle, finished with the madeleines, of course!
