Today's must-try dish isn't a dish at all, but it's very much worth trying...
It’s the pisco sour from Melbourne’s Pastuso. And it’s all your South American cocktail dreams come true…

Why is it a winner?
It is true that we have wanted to go to Lima in Peru since we were children. Not because of its rising reputation as a gastronomic capital or even its incredible Andean cuisine, no it was because that’s where Paddington’s Aunt Lucy was from. Once we got there, we realised the real reason to come to Lima was for the national drink – the pisco sour. At every restaurant, in every hotel, even in the fairly crumby hostel we stayed in, we were offered this cocktail and it was a revelation. It’s a pretty simple combination of pisco – a kind of brandy, lime, bitters and whipped egg white. When we tried it at Pastuso, in uber-Melbourne AC/DC Lane, we were immediately transported back to Peru. But even if you don’t have that point of reference, it doesn’t change one simple fact – the pisco sour here is a tangy, creamy, addictive, delicious delight. I dare you to stop at one.
