Over the years, Bali’s been steadily making its mark on the culinary world. While the pandemic freeze threatened to slow things down, the recent opening of a fine dining restaurant housed in a 25,000-year-old cave shows there’s no end to the island’s natural wonders and scope for imagination. If enjoying an exquisite seven-course menu amidst the atmosphere of a natural subterranean wonderland sounds like your idea of a memorable travel moment, then book your flights to Bali right away. The Cave by Chef Ryan Clift has just opened and Clift, the Culinary Director of the restaurant, is promising a one-of-a-kind experience.
“I really think this is a unique concept, not only for Uluwatu, but for Bali as a whole,” the English-born chef said.
Beyond the food, guests can expect 3D projection shows on the walls of the cave between courses, award-winning interior design from artistic collaborators Ushers Beyond Design, and the chance to observe natural 2.5-metre stalactites and stalagmites in their full, unspoilt glory. Wine and cocktail pairings are optional.
The highly-anticipated underground cave restaurant is the result of an interesting natural discovery back in 2013. During the construction of a new villa for The Edge resort, developers found the untouched cave underneath an Uluwatu clifftop. Since then, the cave has been conserved and transformed into an immersive modern dining venue. It seats 22 guests and lies 6.5 meters below ground, offering a unique, luxurious, and natural wonderland perfect for an intimate lunch or dinner.
“I’m looking forward to bringing my modern gastronomy to this one-of-a-kind venue,” Clift announced.
“I think the inspiration for this project is simple: take what Mother Nature created for you, be grateful and then do her proud. I think the guests of the cave are in for a real treat! And for me this is an opportunity to create a world-class restaurant underground!”
