Well, if you’ve never been to Crazy Pedro’s before, buckle in because after reading this, we can guarantee that you’ll be booking your table immediately!

Dish Cult: Where did the concept of Crazy Pedro’s come from?

Crazy Pedro’s: Crazy Pedro’s was a late night thought of one of our directors, Lyndon Higginson. He came up with the idea of a venue serving pizza and mezcal til late whilst out on a night out and messaged the other directors with his idea! Then a shared love for pizza and mezcal from the three brought the idea to life and fuelled turning the thought into action.

DC: When did you open your Manchester and Liverpool locations?

CP: Our first Manchester site was 2014 on Bridge Street – then we opened in the Northern Quarter in 2016, followed by Liverpool in 2017 – we’re about to open our biggest site yet in Digbeth, Birmingham in late spring.

DC: Will there be more cities to come after that?

CP: We’re always looking at different cities and would love to make Pedro’s a part of everybody’s lives all over the UK.

DC: Crazy Pedro’s pizzas aren’t your average flavours, where did the inspiration for the flavour combos come from?

CP: Honest truth – we have development days where we sit around, try loads of different combinations and drink tequila. Then whatever sticks we roll out as a special or even stick it on the main menu!

DC: What’s the most popular pizza on your menu?

CP: Can never steer too far from our classic Pepperoni. After that it’s probably our Chicken and Waffle pizza, which is a guilty pleasure for most.

DC: If you could create any pizza, what would be on it and what would it be called?

CP: We’ve got a few good ones up our sleeves over the next year – watch this space…

DC: Is your pizza dough handmade?

CP: It was a long process – we tried roughly 20 different doughs throughout the first couple of months of opening and the best received is the one we still use today. Our pizza experts/chefs make our dough every morning for the following day after the proving process. It’s like a little factory when they get going.

DC: How would you describe Crazy Pedro’s to someone who has never been before?

CP: A late night party bar – somewhere you can come with friends, chill, have fun, dance, drink, eat pizza – all until 4am, seven days a week!
