New menus from COYA, London

This autumn, COYA has announced a brand new Global Pisco Bar Menu, with new signature cocktails for all global sites including each of their London locations: Mayfair and City. The new menus feature five flavoursome cocktails, each of which include COYA’s infamous pisco blends.

Their world renowned Pisco Bars draws inspiration from the oldest, fun, buzzing bars in Lima, Peru. Developing on its heritage of Pisco infusions as well as commitment to the arts, COYA is bringing to life a progressive vision for its Pisco Bar worldwide, recreating the vibe of the iconic Peruvian bars with their own bright, colourful and lively locations.

While all COYA locations globally have a Pisco Bar, each one houses its very own, unique, pisco library; in London, these are some of the largest. COYA’s expert mixologists have created these in order to offer a diverse selection of infusions, which feature fine and rare tequilas and an extensive rum variety, ensuring the cocktail list is truly one of a kind. 

The national spirit of Peru, Pisco is a delicate liquid that has the soul of tequila, the complexity of gin and the versatility of vodka. Following the team’s first trip to Peru, they were introduced to the traditional way of cold infusions, known as the Macerados system. COYA’s Pisco Library showcases multiple flavour combinations that are prepared and cared for daily. This helps enhance the experience of COYA’s classic Pisco cocktails and has been instrumental in finding new and improved ways to introduce Pisco to the world.

The Mayfair Pisco Bar Menu includes five signature cocktails:
  • Guajiro Old Fashioned; a blend of Santiago de Cuba 11 yrs, Bordeaux Coffee, panela, maple & soy and COYA bitters
  • De Remate; a delicious mix of Yaguara Cachaca, Campari, chicha morada, herba mate infused falernum, Franklin & Sons mandarin and ginger soda
  • Tunki Tini; a fresh concoction of Ketel One, Aperol, orange liquor, chilli cordial, fresh orange and prosecco
  • Out of the Roots; made up of Casamigos Reposado, Ancho Reyes, Nixta Corn husk, vanilla & mango and Franklin & Sons ginger ale
  • Blue Opal Martini; a sophisticated combination of Tanqueray no.10, rose, violet liqueur, supasawa and pineapple juice

Meanwhile, the City Pisco Bar Menu includes five other signature cocktails:

  • El Tunche “Rainforest demon”; a mix of Volcan Blanco, soursop purée, lime, pineapple juice, agave syrup, coffee beans.
  • Fóshôu “Bergamot flower”; a blend of Plantation 3 Star, Italicus, sugar, fresh lime, guava purée
  • Tumbalocas “Latin lover”; a combination of Del Maguey Vida, mandarin, Mayan salt, basil & kaffir lime cordial, soda water
  • Serendipitat “Fortunate discovery”; made up of Tanqueray, palo santo, pineapple cordial, Franklin & Sons tonic water
  • Mahy “Mayan God of tobacco”; a fusion of Santiago de Cuba 11 yrs, Punt E Mes, falernum liquer, homemade Habano bitters

The new bar menus come to life with distinguished elements of design and refined finishing that honour the founding days of COYA. The front page of the menu specially reflects the original Peruvian photography of Martin Chambi, recognised for the profound historic images of the countryside and towns of the Peruvian Andes. Martin’s art is an integral part of COYA, which bore witness to the launch of many of COYA’s venue launches – it is an inherent part of COYA’s DNA. The colours of blue and gold pay homage to COYA’s brand identity, being the very first design elements of COYA’s Pisco Bar since the founding days of the brand in Mayfair in 2012.

We worked with prestigious French house Sella Concept to incorporate Martin Chambi’s work into contemporary art pieces especially for the pages of the Pisco Bar Menu. Spirited Animals Group and Jonathan Varcoe also helped bring our creative vision for the artwork of the Pisco Bar Menus to life.

The Pisco Bars are a one stop destination where guests can drink, connect and party. This new menu is more distinguished than ever, focusing on COYA’s Peruvian heritage with dominating Latin-American spirits. 

The intricate details and striking embossing of the menus will make it hard for guests to not want to take them home as keepsakes of a spectacular evening. COYA’s Pisco Bars at Mayfair and City are the ideal location for an early evening pre-dinner drink spot, or a luxurious place to spend a full evening partying. Guests will enjoy sipping on these unique cocktails against the backdrop of  COYA’s dynamic music. An intimate spot that will prove hard to leave at the end of the night.
